Making Buckeye's

I have been a little homesick this last week and today had the urge to bake, and thought I'd make some Buckeye's for friends to enjoy, so I set out this afternoon to make (ok it's not really baking) some of these yummy treats! Here are the directions step by step incase you have the urge to make some as well!

Gather the ingredients: Recipe for Buckeye's:
1/2 stick butter (room temp)
1 tsp. vanilla
1 C. creamy Peanut Butter
1/2 tsp. salt (optional)
2-2 1/2 C Powdered Sugar (add a little at a time)
1 C. Chocoalte Chips

Mix all the ingredients in a bowl adding small amounts of Powdered Sugar at a time (you don't want it to be dry and crumbly) I usually end up mixing until I can't anymore and them use my hands to knead it to dough like consitancy
Refridgerate for about 20 minutes or over night. Using a small scoop (Pampered Chef) or 2 spoons to make even sized scoops then roll into small balls 1 recipe makes about 35 balls. Place in fridge for abut 20 minutes or overnight. Melt 1 C chocolate chips and dip the balls in the chocolate coating all but the top of the peanut butter ball. (See Picture below) then refridgerate again until ready to serve can be frozen. Eat and Enjoy!

Mix all the ingredients together:


Form the Dough into small balls:


Place the balls on a wax paper covered cookie sheet to set in the fridge:


Dip the set balls into melted chocolate:

Set chocolate peanutbutter balls back onto wax lined cookie sheet to set in fridge for 20 minutes, can be froxen.
